class=\"cooked-dir-content\">\n<p>Couper la viande en cubes et les mettre dans un faitout. Couvrir d\u2019eau froide et porter \u00e0 \u00e9bullition. Maintenir l\u2019\u00e9bullition 5 minutes, puis \u00e9goutter la viande dans une passoire. Rincer \u00e0 l\u2019eau froide.<\/p>\n<p>Peler l\u2019oignon et le piquer avec les clous de girofle. Couper les carottes en rondelles. Fendre le poireau dans la longueur et laver sous l\u2019eau froide pour \u00f4ter toute trace de terre.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 2\">\n<div class=\"cooked-dir-content\">\n<p>Remettre la viande dans le faitout. Ajouter l\u2019oignon, les carottes, le poireau, le c\u00e9leri, l\u2019ail et le bouquet garni. Verser le bouillon puis saler et poivrer.<\/p>\n<p>Porter \u00e0 \u00e9bullition et \u00e9cumer si n\u00e9cessaire. Couvrir et laisser mijoter 1h30 sur feu doux.<\/p>\n<p>(Pr\u00e9paration des oignons grelots)<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 3\">\n<div class=\"cooked-dir-content\">\n<p>Peler et laver les oignons grelots. Les mettre dans une po\u00eale et couvrir \u00e0 moiti\u00e9 d\u2019eau froide. Ajouter le beurre ainsi que le sel et le le sucre.<\/p>\n<p>D\u00e9couper un disque de papier sulfuris\u00e9 de m\u00eame diam\u00e8tre que la po\u00eale et le percer au milieu. Couvrir les oignons avec cette feuille. Faire cuire sur feu doux jusqu\u2019\u00e0 \u00e9vaporation du liquide.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 4\">\n<div class=\"cooked-dir-content\">\n<p>(Pr\u00e9paration des champignons de Paris)<\/p>\n<p>Nettoyer les champignons de Paris avec une brosse et les \u00e9mincer. Les mettre dans une petite casserole d\u2019eau froide et y ajouter le beurre, le jus de citron et une pinc\u00e9e de sel.<\/p>\n<p>Faire cuire \u00e0 fr\u00e9missements pendant 15 minutes. \u00c9goutter \u00e0 l\u2019aide d\u2019une \u00e9cumoire et r\u00e9server.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 5\">\n<div class=\"cooked-dir-content\">\n<p>(Pr\u00e9paration de la sauce)<\/p>\n<p>Dans une autre casserole, faire fondre le beurre et y verser la farine pour faire un roux. M\u00e9langer et cuire 2 minutes sans cesser de remuer au fouet.<\/p>\n<p>Pr\u00e9lever 50 cl du bouillon de cuisson de la blanquette et le verser progressivement, toujours en remuant au fouet. Faire cuire quelques minutes, jusqu\u2019\u00e0 obtention d\u2019une sauce \u00e9paisse. Saler et poivrer.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 6\">\n<div class=\"cooked-dir-content\">\n<p>(FINITION)<\/p>\n<p>\u00c9goutter la viande \u00e0 l\u2019aide d\u2019une \u00e9cumoire et la mettre dans une cocotte. Verser la sauce, les oignons grelots et les champignons. Faire chauffer quelques minutes sur feu doux en m\u00e9langeant.<\/p>\n<p>M\u00e9langer dans un bol la cr\u00e8me fra\u00eeche \u00e9paisse et le jaune d\u2019\u0153uf au fouet. Retirer la cocotte du feu et y verser cette liaison. M\u00e9langer et r\u00e9chauffer sur feu doux.
