Fruit tartare – mint crystal

Preparation:

For mint:

Boil citrus peels 4 times (orange, mandarin, grapefruit)

Then one last time with the reduction and ½ liter of orange juice and 200 gr of sugar and reduce de then filter and let cool.

Moisten the mint leaves of the previous mixture and rub them with crystal sugar

Let dry.

For the tartare:

Cut out very little fruit (apples, grapes, pears, pineapple, raspberry or strawberry, papaya or mango …)

Put them in a salad bowl and add vanilla sugar

In the mixer the papaya or mango with a little sugar and a little juice of the preparation

Then filter and mix in the salad bowl

Mix the fruits of the salad bowl but not too much

Dressage:

Put a cookie cutter on the plate and fill it with fruit tartar

Decorate with mint leaves

If available add a biscuit type cat tongue or coconut pancake
