Wash the potatoes, then put them in a saucepan and cover them with cold water. Bring to a boil and cook for about 30 minutes.
Peel and chop the 2 cloves of garlic.
When potatoes are cooked, peel and cut into pieces.
In a bowl or large pestle, put the garlic and potato and work with a spatula, adding the egg yolk. Add salt, saffron and chilli, then gradually increase the sauce with 25 cl of olive oil.
