Ingrédients:
 1 langouste vivante de 800 g / 1 kg
 3 à soupe d’huile d’olive
 40 g de beurre
 1 cuil. à soupe de fines herbes (basilic, cerfeuil, persil plat)
 Sel, poivre du moulin
 1 citron
Préparation:

Préchauffez la partie gril du four. Faites fondre le beurre. Lavez et ciselez grossièrement les fines herbes et ajoutez-les au beurre fondu.

Coupez la langouste en deux dans le sens de la longueur. Posez les moitiés dans un plat creux à rôtir côté carapace dessous. Salez, poivrez et arrosez-les d’huile d’olive.

Glissez-les sous le gril, laissez-les cuire 5 min. Retournez-les et continuez la cuisson pendant 5 min carapaces dessus.

Mettez le four en position normal thermostat 7 (210 °C). Retournez maintenant les demi-langoustes chair dessus. Arrosez-les avec le beurre d’herbe fondu et laissez cuire 10 min en les arrosant souvent.

Dressez sur plat et servez de suite, accompagné de quartiers de citron.
