Soak the gelatin sheets in a bowl of cold water.
Bring coconut milk, condensed milk and powdered sugar to a boil.
Then add the dewatered gelatin and vanilla powder.
Pour into ramekins or small silicone molds. Let cool at room temperature then place in the fridge for at least 4 hours.
Remove from pan.

You can add a little bit of rum, but it’s delicious without. I also tested with orange blossom water, it’s very thin but you have to put very little to not kill the taste of coconut. The 24h in the fridge are to be respected ABSOLUTELY !!!! This dish does not freeze. I have always had incredible success with this dessert!
