
The chayote is cultivated in the tropics, as a vegetable for its ripe edible fruit, whose taste and texture are similar to those of zucchini.

Ingredients:
4 chayote
2 big onions
2 boiled eggs + 1 egg
6 tablespoons of olive oil
3 tablespoons white vinegar
Some black olives
Salt pepper
A hint of garlic (I use garlic paste)
1 lemon juice
400 g small shrimps
Preparation:

Peel the chayote, cut them in half and boil them in salted water.

Check if the chayote is cooked by pricking them with a knife.

Remove and let cool 10 minutes. During this time, prepare the mayonnaise (oil and vinegar egg yolk, garlic, salt pepper).

In a salad bowl, cut the chayote into small cubes and the sliced eggs, the cooked shrimps, the olives, the onion into thin slices pour the sauce and mix delicately.

Rectify the seasoning with a touch of English sauce and Tabasco.
