 2 big onions
 2 boiled eggs + 1 egg
 6 tablespoons of olive oil
 3 tablespoons white vinegar
  Some black olives
 Salt pepper
  A hint of garlic (I use garlic paste)
 1 lemon juice
 400 g small shrimps
Preparation:

Peel the chayote, cut them in half and boil them in salted water.

Check if the chayote is cooked by pricking them with a knife.

Remove and let cool 10 minutes. During this time, prepare the mayonnaise (oil and vinegar egg yolk, garlic, salt pepper).

In a salad bowl, cut the chayote into small cubes and the sliced ​​eggs, the cooked shrimps, the olives, the onion into thin slices pour the sauce and mix delicately.
