Ingredients:
 2 pears
 30 ml of lemon juice
 100 g brown sugar
 50 g of butter (optional)
 200 g of goat cheese in a log (the Bûche or the Paillot, for example)
 4 large slices of walnut and pistachio bread
 50 ml of honey (infused with ginger chips … it’s even better)
 Some walnuts in garnish

Preparation:

Cut pears lengthwise into very thin slices with a knife or mandolin.

In a frying pan, melt the butter (optional) and add the brown sugar (by heating the brown sugar quietly, it will melt without the butter).

Place the pear slices in the melted brown sugar.

When the pears begin to caramelize, add the lemon juice and remove from the heat.

Arrange the slices of pears fan on the crusts of bread with nuts.

Place a large slice of goat cheese in the center of the slice and brown for 10 minutes in the oven at 200 ° C.
