Ingredients:
 2 medium pieces of papayas of 500 g each
 25 l of water
 500 g of sugar
 0.05 l (1/20 th) liter on the measuring cup, rum
 ½ vanilla pod
 1 pinch of salt
Preparation:

Choose the almost ripe papayas, peel them, seed them and cut them in half.

Cut them into thick slices of 2 cm lengthwise.

Put these slices in a bowl of cold salted water. Bring to a boil, drain them.

Let them cool and dry with a cloth.

Take a baked dish and place the papaya quarters vertically and tightly. Pour in the sugar, vanilla, rum and water. Put on medium heat (180 °) under cover 10 min.

Remove the lid and cook on a low heat (70 °) for 3 hours. Drain and expose them on a grid in the sun or by default soft oven slightly open door to dry, about 1 hour.

They are very good in jars.

Serve with a fluffy cake or a scoop of ice cream …

    1. Let’s make this easy. A small bottle of rum is 1/10 of a liter. So use 1/2 of a small bottle of rum that. Help

    1. Gert, thank you very much. However, in the ingredients list there is 2.5 liters of water. How much water I should pour together with sugar, vanilla and rum on step 2? Maybe you can tell this from your experience.

      Does salted water on step 1 mean “enough cold water to cover papaya” plus 1 pinch of salt?

  4. Sorry , but your instructions are not very clear why not show liters versus cups on your list of ingredients? For us that only cook using cups and ounces, thank you.
